Jean-Michel Gauffre is a beloved French chef of Edinburgh and the proprietor of the restaurant, La Garrigue ( which offers rustic, family style cooking and specialises in the food of Jean-Michel’s home region, Languedoc.

Jean-Michel also offers wine tours in Languedoc ( – hopefully these will return when unrestricted travel is once again possible.

This is Jean-Michel’s second recipe for us – and it couldn’t be more appropriate to be sharing it on 14 July!
