Peter’s Spaghetti Bolognaise (from First Minister Nicola Sturgeon)

The Right Honourable Nicola Sturgeon MSP has been the First Minister of Scotland and the leader of the Scottish National Party since 2014 but she has been supportive of our work since 2009 when she took part in Miles for Smiles. Nicola said:

“I don’t really cook, I have had lots of disasters and I now prefer not to try, but Peter is a good cook and he enjoys it. Although I now leave most of the cooking to my husband, I am happy to provide the recipe for his delicious spaghetti bolognaise that we both enjoy.

I fully support The BIG Dinner 2 fundraising initiative, and hope that my recipe will inspire ordinary members of the public to host their own event and raise money.

I am delighted to once again support 500 miles. I was pleased to take part in the ‘Miles for Smiles’ campaign back in 2009. Since then I have seen the vital work the organisation has done to improve the lives of those with impaired mobility in some of the poorest parts of the world. It has ensured access to prosthetic and orthotic services for thousands of people, and improved their quality of life immeasurably.

I wish 500 miles every success in their future endeavours across Malawi and Zambia, particularly in the crucial next steps in the handover of services in Kamuzu and Mzuzu Central Hospitals to the Malawi Health Service.”

 

Peter’s Spaghetti Bolognaise

Ingredients (serves 4)

500g Lean Minced Beef (use Quorn as vegetarian substitute)

1 tbsp Olive oil

1 Carrot (cubed or grated)

1 Onion (diced)

2 Celery Stalks (diced)

2 Garlic Cloves (crushed)

2 tbsp Tomato puree

2x 400g Cans Chopped Tomatoes

1 tbsp Tomato Purée

1 tsp Dried Oregano

Salt and Black Pepper to season

5g Fresh Basil

400g Spaghetti

Parmesan to serve

Method

  1. Heat the oil in a frying pan and fry the onions, celery, carrots and garlic
  2. Cook for 5 minutes and when the onion has started to soften add the minced beef and cook until browned
  3. Add the tinned tomatoes and the purée, salt, pepper, oregano and basil
  4. Bring to the boil then reduce heat and simmer for 30 minutes until thickened
  5. 10 minutes before the sauce is ready cook the spaghetti in boiling water (about 9 minutes cooking time)
  6. Mix the spaghetti, with the sauce and serve with fresh parmesan
