Kezia Dugdale’s Peanut Butter Cookies

Kezia Dugdale is the director of the John Smith Centre for Public Service at the University of Glasgow but she is best known for her service as the leader of the Scottish Labour Party from 2015 to 2017.  After leaving front bench politics, she worked as a columnist and appeared in I’m a Celebrity… Get Me Out of Here!

Kezia’s Peanut Butter Cookies

Ingredients (makes 16 to 20)

200g peanut butter (crunchy or smooth – your pick)

175g brown sugar

1 egg

1 teaspoon salt

Method

Put all the ingredients in a mixing bowl and bind together. Drop a dessert spoonful of mix onto a baking sheet, with maybe 8/10 to a tray. They’ll spread a little but not much. Cool for 7/8 minutes until just catching. These are a little crispy but they don’t taste burnt. Leave to cool for minimum of 5 minutes before stuffing your face!
