Monalisa, Maliwase and Ivy’s Futali

“Futali is a traditional Malawian dish which is made when sweet potatoes are in season from April to August.  It is a fortifying breakfast or lunch dish, popular in the cold season because it is warming.””

Maliwase Munthali, P&O technician for 500 miles 

Monalisa Siyamanda, Maliwase Munthali and Ivy Thumba are the Malawian woman who work at the 500 miles Prosthetic & Orthotic centre at Kamuzu Central Hospital in Lilongwe.  Maliwase is a qualified orthopaedic technician, currently studying for her degree.  Monalisa is an orthopaedic technician and Ivy keeps our centre clean and is usually the one to make lunch.

Monalisa, Maliwase and Ivy’s Futali

Ingredients (serves 10)

22 sweet potatoes, peeled and chopped into large chunks

1.7 litres (1 kettle) of water

2 tablespoons of salt

750g of groundnut flour

Method

  1. Put the water and the sweet potatoes in a large pan and bring to the boil.
  2. Add the salt to the boiling water.
  3. Boil the sweet potatoes till they are soft but still a bit firm (you can prick with a fork inside the potato easily but the potato doesn’t break when you do that).
  4. Add the groundnut flour while the water is still boiling and stir vigorously.
  5. Cook for 15 minutes.
