Monalisa, Maliwase and Ivy’s Futali
Ingredients (serves 10)
22 sweet potatoes, peeled and chopped into large chunks
1.7 litres (1 kettle) of water
2 tablespoons of salt
750g of groundnut flour
- Put the water and the sweet potatoes in a large pan and bring to the boil.
- Add the salt to the boiling water.
- Boil the sweet potatoes till they are soft but still a bit firm (you can prick with a fork inside the potato easily but the potato doesn’t break when you do that).
- Add the groundnut flour while the water is still boiling and stir vigorously.
- Cook for 15 minutes.
