Jack McConnell’s Cheesy Beanos

Baron McConnell of Glenscorrodale is a Scottish politician and a labour life peer in the House of Lords.  He served as First Minister of Scotland and leader of the Scottish Labour Party from 2001 to 2007.  But when he is at home eating “Cheesy Beanos” he is just Jack!

It was Jack who instigated the focus of Scotland’s international development policy on Malawi, making small grants available to Scottish organisations working in Malawi.  He retains a strong interest in developing the relationship between the two countries including through the McConnell International Foundation.

Jack McConnell’s Cheesy Beanos

Ingredients: (serves 1):

A slice of bread (any kind)

Butter

A small tin of beans in tomato sauce

Cheese sliced

Black pepper

Method:

  1. Lightly toast the slice of bread on both sides and let cool.
  2. Butter the toast.
  3. Spoon the beans onto the buttered toast.
  4. Put a layer of sliced cheese over the beans.
  5. Place the toast, beans and cheese under the grill until the cheese bubbles.
